Cheesy Beef Stuffed Bell Peppers

Stuffed Bell Peppers is the kind of dish that can be altered in so many different ways while still turning out delicious and hearty. Just one serving of these Cheesy Beef Stuffed Bell Peppers is a meal all on its own! It’s filled with a satisfying mixture of vegetables, beef and cheese. Many recipes call for adding rice in the stuffing as well but I opted to leave it out. By eliminating the rice, the cook time is decreased and the meal is considered slightly more “low-carb.” You can choose to swap out the corn and beans for other lower carb vegetables as well. 

PREPARING THE FILLING FOR THE STUFFED BELL PEPPERS

For these cheesy beef stuffed bell peppers, you’ll start off by cooking the ground beef on the stovetop. After draining the excess grease, you’ll then add all the vegetables and spices into the same skillet with the beef. The mixture will create a nice medley of colors and amazing taste. Cheese is added last, pulling all the ingredients together to produce your final cheesy stuffing mixture. 

YOU CAN CUT THE BELL PEPPERS IN HALF OR LEAVE THEM FULL SIZE

As you’ll notice from my pictures, I have a combination of full-size stuffed bell peppers and half-size bell peppers. The reason is simply because I couldn’t decide which form I wanted them in, so I did a little bit of each. Either form you choose, the measurements for the stuffing will still be accurate to fill 9 bell peppers (halved or full). And the 30 + 10 minute cook time was more than enough to soften the bell pepper shells in the oven.

STUFFING THE BELL PEPPERS

Before stuffing the bell peppers, I like to mix in a heaping two cups of cheese to the beef/veggie filling. This ensures that you’ll get a deep cheesy flavor in every bite! Then, start scooping in the mixture into each bell pepper. Making sure to pack your bell peppers nice and tight. And if there’s some leftover room in your bell peppers, don’t be afraid to fill the extra space with more shredded cheese!

These Cheesy Beef Stuffed Bell Peppers are filled with a satisfying mixture of vegetables, beef and cheese making one serving of these stuffed bell peppers a meal all on its own!

Ingredients

  • 9 bell peppers

  • ​2 lbs ground beef

  • ½ yellow onion, chopped

  • 15 oz canned black beans, drained

  • 14 oz canned corn, drained

  • 14 oz canned stewed tomatoes, drained and chopped

  • ½ tsp garlic salt

  • ¼ tsp black pepper

  • ¼ tsp paprika

  • 2 cups shredded cheese (plus more for sprinkling on top)

Directions

  • In a large skillet, heat the ground beef on medium until cooked through and brown all around
  • While beef is cooking, cut the bell peppers in half (If you’d like larger servings, you can just cut the top off each bell pepper instead)
  • Scoop out and discard all the insides of each bell pepper
  • Preheat oven to 375 degrees. Prepare a large baking pan by lining it with parchment paper
  • Add the cut bell peppers side by side on the prepared baking pan
  • Once beef is done cooking, drain the excess grease then return to the stove top on medium heat
  • Add the chopped onions, black beans, corn, stewed tomatoes and all the spices to the skillet with the beef
  • Mix everything well and heat about 3-5 more minutes
  • Remove from heat and add the 2 cups of cheese. Mix well until cheese is melted
  • Scoop the mixture into each bell pepper until they’re all filled to the top
  • Place in oven and bake for 30 minutes
  • Remove from oven, top each bell pepper with more shredded cheese.
  • Return to oven and bake for an additional 5-10 minutes until cheese is melted
  • Serve and enjoy!
