First thing’s first: Don’t let the name of this website fool you. I do not mean to say I’m such an awesome cook that I can make anything with my eyes closed. Rather, my meals come out looking like I did, in fact….. make them with my eyes closed. I’m one of those people who learns as they go, and I hope some of you out there can relate! I’m eager to have this blog help me perfect my cooking skills and if it helps others along the way, that’s all the better! My cooking motto is simple: no rules, no limits, and get as messy as you can get. Ask my husband, I’m one of the messiest people in the kitchen. But in my defense, it’s my secret weapon to ensuring a yummy meal.
A little bit about myself on a personal note: My name is Renee and I live in California with my husband and two beautiful children. I’m currently a stay-at-home (and work-from-home) mom so I try to fit in my cooking in between my kids’ crazy schedules. For this reason, I like recipes that are quick, easy, and leave lots of delicious leftovers. Before deciding to stay home, I worked as a Medical Assistant for an Endocrinologist and Diabetic Specialist for over 5 years. So, if anyone would like advice on diabetic meal preparations, feel free to contact me!
My goal is to someday complete enough recipes to fill my own personal cookbook. I will usually write out the ingredients and directions to my recipes but find myself improvising every time I make a dish. My recipes are easily adjustable, and I definitely encourage everyone to add their own flare to my ideas if they like!
