These Low-Carb Cauliflower fritters are packed with nutrients and amazing flavor! They’re also paired with their very own, low-carb, low-calorie pesto dressing! A serving of these fritters INCLUDING the dressing boasts only 8 carbs and 168 calories! It’s the perfect diet food that will still keep you feeling full and satisfied. I love pairing them with pickles and jalapenos because it adds a little oomph to the meal without any extra calories.
CAULIFLOWER AS A LOW-CARB ALTERNATIVE
I’ve been experimenting a lot lately with cauliflower because it’s a great alternative to higher carb ingredients. I made a delicious Cauliflower Fried Rice recipe a few months back that was so good I didn’t even miss the rice. This recipe for low-carb cauliflower fritters incorporates the same technique of mincing the cauliflower in a food processor until it becomes a “rice-like” consistency. The rest of the ingredients needed for the fritters include a mix of parmesan, almond flour, eggs and spices! Very simple ingredients that are not only low-carb themselves, but also act as binding and flavoring agents for the final product.
USING AN ELECTRIC GRIDDLE
You may have noticed that I love using an electric griddle for so many of my recipes! Although it’s not a necessity, and a regular skillet would work just fine, here are some reasons I still prefer a griddle:
- Faster Cooking: The large surface area allows me to cook all my patties at the same time, whereas using a skillet I sometimes have to cook in batches.
- No Oil Needed: The nonstick surface allows me to cook and flip my food without needing ANY oil or butter. This saves me so many calories when I’m trying to eat healthy.
- Even Cooking, Juicy Patties: The heat distribution is amazing on my griddle. My food cooks evenly inside and out. And anytime I cook patties on my griddle, they come out juicier and more flavorful then skillet or oven-baked patties.
- Easy Clean Up: This goes back to the nonstick surface which ensures there isn’t any leftover burnt food pieces stuck on after cooking. The plug and handles are both removable so I can easily and quickly wash it up in the sink with soap and water.

CREAMY PESTO DRESSING
Adding a little sauce or dressing to your healthy recipes gives you extra flavor and prevents you from feeling like you’re “missing out” on anything. The trick is to ensure your dressings are as healthy as possible. Most of the calories in pesto come from the excessive amount of olive oil in the mixture. Since olive oil consists of mostly healthy fats, there’s some peace of mind knowing the calories that come with it are not all bad. I definitely wanted a creamy dressing to pair with the cauliflower fritters so I decided to mix the pesto with half a cup of low-fat plain Greek yogurt. The end result was a deliciously creamy, low-calorie, and low-carb pesto dressing!
LOW-CARB CAULIFLOWER FRITTERS
As a low-carb meal, these fritters are great all on their own. But if you’re not following any special diet and want something extra alongside them, then I’d highly suggest serving them with this Avocado, Corn & Black Bean Salad. Low-Carb Cauliflower Fritters with Pesto Dressing

Ingredients
1 large cauliflower, cut into florets
½ cup grated parmesan
¼ cup almond flour
2 eggs
½ onion, chopped
4 cloves garlic, minced
1 tsp garlic salt
1 tsp black pepper
1 tsp paprika
- FOR PESTO DRESSING
½ cup pesto
½ cup Greek yogurt
Directions
- Mince the cauliflower florets in a food processor until they develop a “rice-like” consistency
- Transfer the minced cauliflower to a large mixing bowl. Add the parmesan, almond flour, eggs, onions and all the spices
- Mix until all ingredients are blended together well
- Form the mixture into 8 even patties/fritters.
- If you’re using an electric griddle, turn the heat to 300 degrees (no need to preheat). If you’re using a regular skillet, butter or oil the skillet first and set the heat to medium
- Place the formed fritters on the griddle (or skillet) side by side but not touching. Flatten each fritter with the back of a spatula until they are about ½ an inch thin
- Cook the fritters for about 10 minutes until they are browned on one side. Then flip the fritters and cook an additional 5-8 minutes
- While fritters are cooking, prepare the pesto dressing by blending the pesto and Greek yogurt in a small bowl until smooth and creamy
- Remove fritters from heat once they’re done cooking and serve them with a dollop of the pesto dressing. Enjoy!
