I can’t tell you enough how EASY this Oven Roasted Carrots & Asparagus recipe is! It’s one of those side dishes that you can make in 20 minutes with very little prep and minimal dishes. Plus, carrots and asparagus make a great side to almost any meal. They add a little color to your dinner plate and a whole lotta flavor!

Carrots and asparagus have so much taste all on their own, that you really don’t need that many ingredients to spice them up. In fact, I only used a simple combination of olive oil, garlic salt, and black pepper. 

When roasted in the oven, the carrots release their naturally sweet flavor which compliments the salt and pepper perfectly.  Asparagus adds its own unique “earthy” taste to this side dish but it’s also known to soak up the flavors of its seasonings quite efficiently. So, you’ll really notice the savory garlic salt and pepper when taking a bite out of it.

These Oven Roasted Carrots & Asparagus make for a savory side dish to almost any meal! They’re so easy to make with very little prep time and only 5 simple ingredients.

Ingredients

  • 16 oz whole carrots

  • 16 oz asparagus

  • 2 Tbs olive oil

  • 1-2 tsp garlic salt

  • 1 tsp black pepper

Directions

  • Preheat oven to 400 degrees and spray a large baking pan with cooking spray
  • Cut the carrots in half, lengthwise, creating thinner slices (see pictures above for reference)
  • Place the asparagus and carrots on the baking pan and pour the olive oil all over. Toss with your hands to ensure the olive oil coats everything evenly
  • Sprinkle the garlic salt and black pepper on the carrots and asparagus. Toss with your hands again to evenly distribute
  • Spread the carrots and asparagus evenly on the baking pan (it’s okay if some of them overlap a little)
  • Bake for 20 minutes
