- Streusel Topping
¾ cup brown sugar
1 tsp cinnamon
¼ tsp apple pie spice
½ cup butter, softened
1 cup flour
- Sliced Apple Layer
1 medium apple (peeled and sliced)
1 tbs lemon juice
½ tsp cinnamon
1 tsp sugar
- Cake Batter
½ cup yogurt (vanilla or plain)
½ cup applesauce
¾ cup brown sugar
1 tsp vanilla extract
1 egg
2 cups flour
1 tsp baking soda
½ tsp baking powder
2 tsp cinnamon
1 medium apple (peeled & shredded)
- Optional Glaze
2 Tbs apple cider
½ cup powdered sugar
Directions
- Preheat oven to 350 degrees and grease an 8” round cake pan (preferably one with a removable bottom)
- Prepare Streusel Topping: In a small bowl, mix the brown sugar, cinnamon and apple pie spice.
- Add the softened butter and use a fork to mix until mostly combined with a few chunks.
- Add the flour and continue to mix with a fork in a “choppy” action until the mixture develops a sandy color with lots of crumbly chunks. Store in fridge until ready to use
- Prepare the Sliced Apple Layer: Peel, core, and slice the apple into thin slices. Mix with the lemon juice, cinnamon and sugar. Store in fridge until ready to use
- Prepare the Batter: In a large mixing bowl, add the yogurt, applesauce, brown sugar, vanilla and egg. Mix with an electric beater until smooth
- Add the flour, baking soda, baking powder, and cinnamon. Mix with beaters again until well blended
- Add the shredded apple and gently fold into the batter with a spoon
- Pour the batter into the prepared cake pan. Add the sliced apples on top in an even layer (it’s okay if they overlap a little)
- Top evenly with the streusel mixture
- Bake for 48 minutes until a toothpick comes out clean. Let cool about 10 minutes before slicing
- If you’re making the optional apple cider glaze: Whisk together the apple cider and powdered sugar until smooth. Drizzle on top of the whole coffee cake or serve with individual slices as desired
- Store in an air tight container in the fridge. Reheat individual servings in microwave if desired
