These Almond Joy Cookies are one of those recipes that I was very thankful to have found! They’re so unique, delicious, and super easy to make with only 4 ingredients. I found the original recipe on Mom on Timeout’s website and of course I had to try it. I was not disappointed, and you won’t be either!
I personally love almond joys, so to have them in cookie form is like having the best of both worlds. This cookie is extremely satisfying. It’s not too heavy and has the best combination of ingredients. I deviated from the original recipe just slightly by adding a bit more almonds for an extra almond-y crunch.
These are a bit messy to make so I suggest investing in a good cookie scoop (affiliate link) to make your life easier. You can scoop them unto the cookie sheet as is, or use wet fingers to mold them into a neater shape. Either way, these cookies don’t really spread out when baked, so they’ll come out of the oven looking just as they did going in, except slightly browner.

Almond Joy Cookies

These Almond Joy Cookies are unique, delicious and super easy to make requiring only 4 ingredients! Filled with chocolate, coconut and almonds.
Ingredients
14 oz bag of sweetened coconut flakes
2 cups chocolate chips
1 cup chopped almonds
14 oz can sweetened condensed milk
Directions
- Preheat oven to 325 degrees
- Add the coconut, chocolate chips, almonds, and condensed milk into a large bowl
- Stir all ingredients with a large spoon until well combined
- Cover a large cookie sheet with parchment paper
- Use a medium sized ice cream scoop to scoop out chunks of dough about 1.5 inches in diameter and place unto cookie sheet
- Cookies can be close together (about ½ inch) because they will not spread
- Use wet fingers to mold cookies into a neater shape if desired
- Place in oven and bake for about 15 minutes or until cookies are golden brown
- Remove from oven and let cool before serving
