Cheesy Spinach & Chicken Linguine

Pasta is one of my favorite things to eat This particular recipe was inspired by The Slow Roasted Italian’s One-Pot Cheesy Italian Pasta. I’ve added several modifications but it looks and tastes just as delicious! I LOVE the flavors bursting out of this dish. What makes it even better is you can cook everything in one pot saving so much time and adding to the amazing flavor. Read on to learn some tricks on making this Cheesy Spinach & Chicken Linguine.

USING A JUMBO COOKING PAN

For one-pot recipes like these, it’s best to use an extra large saute pan. This ensures all the ingredients will fit comfortably with plenty of room to stir. Here’s a link to the type of jumbo pan I use at home all the time:

ENSURING PERFECTLY COOKED LINGUINE

I’ve made this dish several times with a lot of trial and error. Originally, my pasta would come out a bit too soggy. In order to fix this issue, I had to adjust the liquid portion and placement of the linguine. Since all the ingredients cook in one pot at the same time, it’s important to make sure the linguine is completely submerged in water. This ensures the linguine will cook through evenly and thoroughly. It helps if you put the linguine on the bottom of the skillet under all the other ingredients. And don’t forget to mix frequently to prevent the pasta from sticking!

CHEESY SPINACH & CHICKEN LINGUINE

The sauce for this dish is made by combining chicken stock, lemon juice and sun-dried tomatoes. As they cook in the skillet with the rest of the ingredients, they create a deep final flavor. An easy pasta dish that is full of zesty, cheesy flavor. It only requires one pot and 25 minutes of your time to get this meal on the table.

Ingredients

  • 16 oz package of linguine

  • 1.5 lbs chicken breasts (cut into small cubes)

  • 10 oz fresh spinach

  • 8 oz cut sun-dried tomatoes in oil/herbs, drained

  • ½ large yellow onion, chopped

  • 7 garlic cloves, sliced

  • 2 tsp Italian seasoning

  • 2 tsp garlic salt

  • 1 tsp black pepper

  • 4.5 cups chicken stock

  • ½ cup lemon juice

  • 6 oz shredded Parmesan cheese

Directions

  • Add the uncooked linguine to a large skillet first so that it sits on the bottom of all other ingredients
  • Add the sun-dried tomatoes, chicken, chopped onions, garlic, all the spices, and HALF the spinach to the skillet on top of the linguine
  • Pour the chicken stock and lemon juice over all the ingredients and set the burner to medium-high heat
  • Cover and bring to a boil stirring pasta frequently to prevent sticking
  • Continue cooking until pasta is tender and chicken is cooked through (about 15 minutes). Be careful not to overcook as this can cause pasta to get mushy & sticky.
  • Turn off burner. Add all the Parmesan cheese and stir with tongs or fork until cheese is melted and combined well
  • Add the second half of the spinach and mix
  • Serve with red pepper flakes if desired and enjoy!
