Ricotta is my new discovery for the year and I’m sure glad we’ve been acquainted! The first recipe I used it in was my Stuffed Eggplant Roll Ups (which were a big hit and recurring meal since then). I had a lot of leftover ricotta after that so I decided to try out different recipes. One of which was this refreshing and zesty Spinach Ricotta Dip. Perfect with some whole wheat crackers or tortilla chips! Read on for the full recipe.

Spinach Ricotta Dip

kcalA zesty, refreshing Spinach Ricotta Dip that pairs perfectly with whole wheat crackers or tortilla chips!
Ingredients
4 oz fresh spinach
2 cups part skim ricotta
¼ onion
1 tsp onion powder
2 tsp garlic salt
½ tsp black pepper
½ Tbs lemon juice
Directions
- Grind the spinach and onion in a food processor first
- Add the ricotta and continue grinding in food processor until smooth
- Add all the spices and lemon juice. Mix in food processor again until well blended
- Serve with your favorite chips or crackers!
