Cinnamon Apple Pancakes Recipe

The weather’s getting cooler, the leaves are changing color, Halloween is right around the corner, and the apples are in season! This coming weekend is the perfect time to cozy up your morning with some Cinnamon Apple Pancakes. Your house will smell amazing and your taste buds will thank you. 😉

This recipe includes your basic pancake ingredients with the addition of a heaping scoop of ground cinnamon and shredded apples mixed right into the batter. You can use any type of apples you prefer. Sweeter apples include Honeycrisp, Gala or Fuji. But Granny Smith also works great in this recipe because its tart taste combines well with the cinnamon and sugar.

One very important tip I want to put out there about the pancake batter – DO NOT OVERMIX! With any pancake recipe overmixing is a surefire way to ruin a pancake. It weakens the batter and yields flat pancakes. The trick is to whisk your batter gently by hand until the flour is JUST combined with the wet ingredients. Lumpy batter is okay and preferable. This method will ensure incredibly fluffy pancakes every time!

Cozy up your mornings with the perfect fall breakfast – Cinnamon Apple Pancakes! Filled with sweet cinnamon apple flavor in every bite.

Ingredients

  • 1 egg

  • ½ cup milk

  • 2 Tbs vegetable oil

  • 2 Tbs granulated sugar

  • 1 tsp vanilla

  • 1 cup flour

  • 1 ½ tsp cinnamon

  • 2 tsp baking powder

  • ½ apple, shredded

  • FOR TOPPING
  • Maple syrup

  • Ground cinnamon

  • Chopped apples

Directions

  • In a large bowl, whisk together the egg, milk, oil, sugar and vanilla until well combined
  • Add the flour, cinnamon and baking powder. Carefully whisk the dry ingredients until they are blended with the wet ingredients. BE CAREFUL NOT TO OVERMIX THE BATTER. Lumps are okay!
  • Add the shredded apples to the batter and gently mix
  • Heat your griddle to 325 degrees. Pour about ¼ cup batter for each pancake
  • Cook about 3 minutes on one side until bubbles form, then flip and cook another 3 minutes
  • Remove from heat. Serve with maple syrup, ground cinnamon and chopped apples
