These burgers were good. I mean, really good. Typically, burgers are great all on their own, but these Mushroom Pesto Burgers took the burger game to a whole other level! Now, I don’t want you guys to think I’m tooting my own horn because this recipe wasn’t ALL my idea. I actually got the inspiration from the monthly magazines my local supermarket sends me for being a loyal customer.
Yes, I’m a total food-geek and I read those magazines from front to back, taking in all the tips, tricks and recipes they have to offer. I made a few ingredient alterations and opted to cook them on an electric griddle instead of a grill (which saved me so much time). THE MAIN EVENTS: MUSHROOM & PESTO
What I really loved about this recipe is that the mushrooms and pesto are blended in with the ground beef creating one big super mixture. You’ll start by pulsing the mushrooms in a food processor until they’re completely minced. You’ll then mix them in with the beef and pesto sauce. The pesto gives the patties an incredibly savory flavor and juicy texture.
The mushrooms add to the juicy burgers as well but they also help stretch the beef giving you more bang for your buck. I was able to get 8 whole patties out of this recipe and they were all fairly large in size. After forming the mushroom, beef and pesto mixture into even patties, you’ll start the fun and EASIEST part: cooking them on a griddle.
THE ELECTRIC GRIDDLE
My electric griddle has literally been a life saver for me in the kitchen. I use it for soooo many different recipes such as my Whole Wheat Pancakes & Nutella French Toast. But I’ve also used it to cook chicken strips, bacon, sausages, and now BURGERS! It saves me a ton of time because its large size allows me to cook larger batches of items all at once.
I admit I was a little worried when I first decided to cook my burgers on the electric griddle. I wasn’t sure if the burgers would cook evenly or if they would cook too slow, etc. But honestly, they cooked through perfectly. No burnt sides, no red insides, and they were juicier than any burger I’ve ever made. I outline exactly how to cook the burgers on the electric griddle in the full recipe below. Lastly, I want to mention that these burgers include a super simple recipe for a creamy pesto sauce that really brings out the overall pesto flavor of the burgers. And when I say simple, I mean 2-ingredient-simple. Mayo and pesto sauce are all you need. It’s the perfect condiment for this burger! Other than that, you can add your usual favorite burger topping for the finishing touches creating an epic Mushroom Pesto Burger. 😉
Mushroom Pesto Burgers – Electric Griddle Recipe

Ingredients
- FOR PATTIES
8 oz fresh mushrooms
2 lbs ground beef
½ cup pesto sauce
- FOR PESTO SAUCE
2 Tbs pesto sauce
¼ cup mayo
- IDEAS FOR SERVING
Buns
Lettuce or Spinach
Tomatoes
Onions
Cheese
Directions
- Pulse the mushrooms in a food processor until they are chopped small
- In a large bowl, add the chopped mushrooms, ground beef and pesto sauce. Mix well until everything is combined evenly. It helps if you use your hands to mix in this step
- Form the mixture into 8 even patties
- If using an electric griddle, preheat it to 350 degrees (if you don’t have a griddle, you can also cook them on a grill, skillet or oven)
- Add all the patties to the griddle and cook for about 8 minutes until they are sizzling and browned. Then flip the patties and cook for another 8 minutes. You can increase/decrease cooking time depending on what doneness you prefer
- While burgers are cooking, prepare the sauce by mixing the mayo and pesto sauce in a small bowl until smooth. Set aside until time to serve
- Once patties are cooked through, you can serve them on your choice of buns, top them with the prepared pesto sauce and any other toppings of your choice

- STORAGE: If you have leftovers, they will store well in an air tight container in the fridge for 3-4 days.
