This Oven Baked Flounder has a crispy, breaded layer on the outside and a tender, flaky consistency on the inside. An easy one-pan meal for seafood lovers!

Ingredients

  • 16 oz skinless, boneless flounder (about 5 filets)

  • 24 oz small golden potatoes

  • 16 oz asparagus spears

  • ¼ cup olive oil, divided

  • 2 tsp garlic salt, divided

  • 1 tsp black pepper

  • ½ cup bread crumbs

  • ½ cup grated parmesan

  • 1 lemon, squeezed for juice

Directions

  • Preheat oven to 425 degrees
  • Add the potatoes & asparagus to a large sheet pan. Drizzle with HALF the olive oil and toss to coat
  • Sprinkle with 1 tsp garlic salt and 1 tsp black pepper
  • Drizzle the flounder filets with the rest of the olive oil, coating both sides
  • In a wide bowl, mix the bread crumbs, parmesan, and 1 tsp garlic salt
  • Dip each filet into the bread crumb mixture, coating both sides generously
  • Add the breaded filets to the sheet pan with the vegetables (it’s okay if they overlap with the vegetables)
  • Squeeze the lemon juice all over the filets
  • Place in oven and bake for 20 minutes. Then, broil for 2-3 minutes to crisp/brown the tops of the filets
  • Serve and enjoy!
