Ingredients
16 oz skinless, boneless flounder (about 5 filets)
24 oz small golden potatoes
16 oz asparagus spears
¼ cup olive oil, divided
2 tsp garlic salt, divided
1 tsp black pepper
½ cup bread crumbs
½ cup grated parmesan
1 lemon, squeezed for juice
Directions
- Preheat oven to 425 degrees
- Add the potatoes & asparagus to a large sheet pan. Drizzle with HALF the olive oil and toss to coat
- Sprinkle with 1 tsp garlic salt and 1 tsp black pepper
- Drizzle the flounder filets with the rest of the olive oil, coating both sides
- In a wide bowl, mix the bread crumbs, parmesan, and 1 tsp garlic salt
- Dip each filet into the bread crumb mixture, coating both sides generously
- Add the breaded filets to the sheet pan with the vegetables (it’s okay if they overlap with the vegetables)
- Squeeze the lemon juice all over the filets
- Place in oven and bake for 20 minutes. Then, broil for 2-3 minutes to crisp/brown the tops of the filets
- Serve and enjoy!
