We all know by now that the best way to jazz up any dish is to add BACON! That’s exactly what I did with these Skillet Bacon Potatoes. You get perfectly sautéed potatoes spiced up with garlic, onions, black pepper and salt. And then you add crispy bacon to the mix for that extra savory flavor. This is one dish that’s guaranteed to disappear fast!

For the potatoes, you can really use any kind you like as long as you chop them up into bite sized cubes. I love using medley potatoes because of their color variety and small shape. But you can also use small golden potatoes, red potatoes or russet potatoes.

For this recipe, you’ve got to fry the bacon first to ensure you yield some delicious bacon grease to cook your potatoes in. I find it a lot easier to cut up the bacon into small pieces BEFORE you cook it. I would highly suggest using kitchen scissors if you have them. They’ll cut through the raw bacon like butter.

These Skillet Bacon Potatoes are filled with perfectly sautéed potatoes spiced up with garlic, onions, and crispy bacon for that extra savory flavor.

Ingredients

  • 24 oz medley potatoes, cut into quarters

  • 16 oz bacon, chopped

  • ½ onion, chopped

  • 4 cloves garlic, minced

  • ½ tsp black pepper

  • ½ tsp garlic salt

Directions

  • In a large skillet, fry the chopped bacon on medium heat until brown and crispy
  • Remove the bacon from the skillet but keep about HALF the bacon grease in the pan. Set the cooked bacon aside for now on some paper towels
  • Add the chopped potatoes to the skillet with the bacon grease. Add the onions, garlic, black pepper and garlic salt
  • Mix, cover and heat on medium. Stir occasionally to prevent potatoes from burning. Cook for about 15 minutes or until potatoes are tender
  • Add the cooked bacon back to the skillet and mix until everything is combined well
  • Remove from heat, serve and enjoy!
