Although I personally have not switched over to the vegan way of life, I would like to say that the vegan diet is something I truly applaud. It takes a great deal of self-control to refrain from all animal products. Being a part of the Coptic Orthodox church, this is something that we practice yearly for Lent. 55 days of a strict vegan diet. And let me tell you, it is HARD to say the least. In order to alleviate the cravings for meat and cheese, we like to get a little creative with our food. That’s how this lovely Vegan Black Bean Burger came to be!
Black beans are one of my go-to ingredients when I want a quick meal, so my pantry is always full of cans and cans of them. But on this particular day, I was really craving a burger. Naturally, I googled “Vegan Burgers” and found the brilliant idea for black bean patties. Vegans really are imaginative. I raided my fridge and pantry and put together my own version of a black bean patty from the ingredients I had on hand. It was so savory and full of flavor that my burger craving was satisfied tenfold. Please give this Vegan Black Bean Burger a try! You won’t be disappointed.

Vegan Black Bean Burger Patties

kcalVegan Black Bean Burger Patties – full of flavor and a secret ingredient that helps hold everything together! They will satisfy your burger cravings tenfold!
Ingredients
15 oz can of black beans
¾ cup salsa (I used “medium” for a little spice)
1 1/3 cup old fashioned oats (secret ingredient to hold everything together!)
1 Tbs soy sauce
1 ¼ tsp chili powder
½ tsp garlic salt
½ cup corn kernals
Directions
- Using a food processor or blender, grind the oats first for a few seconds until this have a powdered appearance (it’s okay if some oat pieces are still whole)
- Add the black beans into the food processor with the oats and grind again until smooth
- Add the salsa, soy sauce, chili powder, and garlic salt. Grind until well combined
- Pour the mixture into a separate bowl and add the corn kernals (best if the corn is fresh to reduce moisture. If you decide to use canned corn, be sure to drain water well). Mix with a spoon until corn is distributed evenly throughout
- Preheat oven to 375 degrees and line a baking sheet with parchment paper.
- Form the patties. The mixture will be a little loose, so you won’t be able to form the patties in your hand. Instead, pour about ½ cup of mixture for each patty unto the baking sheet and form into a circle using fingers
- Place in oven and bake for about 25 minutes. Once baked, the patties will hold together well and you’ll be able to remove them from the pan using a spatula
- Serve on a hamburger bun with all your favorite burger ingredients!
