DRAINING THE TOFU
When it comes to tofu, cooking method makes all the difference. My number one rule is to ALWAYS drain as much water from your tofu as you can before cooking. You might be asking; how do you drain water from tofu? I’ve compiled a simple list outlining the method that has always worked wonders for me:
- Slice your slab of tofu into two thinner slabs about 1 inch thick
- On a flat surface, stack together 5 paper towels. Place your slabs of tofu on top of the paper towels, then cover the tofu with another layer of 5 paper towels
- Place something flat and heavy on top of the covered tofu. Some suggestions would be a large cast iron skillet filled with water for weight, a heavy glass baking dish also filled with water for weight, or water gallons.
- Let the tofu sit this way for 15-30 minutes to drain. The paper towels will absorb as much water from the tofu as they can hold.
- Once the tofu is done draining, discard the paper towels. Your tofu is now ready for chopping and cooking.
SPICY TOFU & SPINACH STIR FRY
After draining the tofu, you’ll be all set for cooking this delicious stir fry. This recipe is a breeze to make! You’ll fry the tofu in a large skillet, then add the serrano peppers. While the tofu is cooking, you can prepare the stir fry sauce in a small bowl and then simply pour it over the tofu in the skillet. It should take no more than 3 minutes for the sauce to thicken and stick to the tofu. Finally, add the spinach and you’re all done! Spicy Tofu & Spinach Stir Fry

Ingredients
2 packs extra firm tofu (14 oz each)
3 serrano peppers, chopped
1 Tbs butter (or margarine to keep it vegan)
2 Tbs oil (vegetable or canola)
5 oz fresh baby spinach
½ tsp salt
½ tsp pepper
- FOR STIR FRY SAUCE
¼ cup soy sauce
1 Tbs toasted sesame oil
1 Tbs brown sugar
1 Tbs cornstarch
5 garlic cloves, minced
½ tsp garlic powder
½ tsp crushed red pepper flakes
Directions
- Drain the water from the tofu and chop into bite sized cubes (about 1 inch all around)
- In a large skillet, heat the oil and butter on medium until the butter melts
- Add the tofu to the skillet side by side. Sprinkle with the salt and pepper
- Fry the tofu, flipping each side until lightly brown all around
- Add the serrano peppers and mix with the tofu being careful not to break apart the tofu
- Prepare the stir fry sauce by mixing ALL the sauce ingredients in a small bowl until well combined
- Pour the sauce into the skillet with the tofu. Mix and continue heating for about 3 minutes until the sauce thickens and sticks to the tofu
- Turn the heat off and add the baby spinach. Mix until the spinach wilts
- Serve with white or brown rice and enjoy!
