Peanut Butter Oatmeal Bites

Although I’m placing this recipe under my “Desserts” category, I really think of these Peanut Butter Oatmeal Bites as more of a healthy snack. I mean really, if you remove the chocolate chips, they just become a satisfying protein-filled piece of grub. But it is definitely a bonus that they satisfy your sweet tooth at the same time. So, for now, I’m keeping them as a dessert if that’s cool with you guys. 

Like I always say, a short ingredient list makes for happy cooking. Although you’re not technically cooking this recipe. Everything about these bites are easy from start to finish. Mix em’, mold em’, freeze em’, and pop em’ in your mouth. No baking required! Can’t get any simpler than that. 

Peanut Butter Oatmeal Bites

I like to use crunchy peanut butter because it’s obviously the best. But if you’d like a lighter result, you can substitute for smooth. I’ve even tried almond butter in the past for this recipe. These little bites are great for dessert or a healthy protein-filled snack. Full of oatmeal, crunchy peanut butter, honey and chocolate chips!

Ingredients

  • 2 cups old fashioned oats

  • 1 cup crunchy peanut butter

  • ½ cup honey

  • 1 cup chocolate chips

Directions

  • In a large bowl, mix the oats, peanut butter and honey together with a metal spoon until well combined
  • Stir in the chocolate chips into the mixture until evenly distributed
  • Place the mixture into the freezer for about 10 minutes to harden slightly (this will make them easier to mold)
  • Line a baking sheet with parchment paper
  • Remove mixture from freezer. Use a medium sized ice cream scoop to form mounds on the baking sheet. Press mixture tightly into the ice cream scoop before releasing lever to ensure the bites hold together well
  • Cover with plastic wrap and then place the entire pan with the bites into the freezer for at least 1 hour
  • Remove and enjoy!

Notes

  • *STORAGE – You can continue to store leftovers in the freezer in an airtight container or covered in plastic wrap. Or for softer bites, keep them stored in the fridge so that they hold their shape.
