Avocado, Corn & Black Bean Salad

I made some delicious Imitation Crab Cakes the other day and needed JUST the right side dish for them. That’s where this Avocado, Corn & Black Bean Salad came in. I wanted something light and refreshing that complimented the crab cakes well but still had tons of flavor itself. I love that this salad includes minimal, simple ingredients. And it’s topped with a zesty dressing that pulls everything together into one scrumptious salad.

Avocado, Corn & Black Bean Salad

The salad itself consists of fresh avocados, onions, canned black beans and corn. You’ll simply chop the onions and avocados, drain the corn and black beans, and place everything into a large salad bowl. You’ll then prepare the dressing in a separate smaller bowl. The dressing consists of olive oil, lime juice, garlic, salt, black pepper and cayenne pepper. After blending the ingredients for the dressing, you’ll pour it over the salad and mix until all the vegetables are coated evenly.

This Avocado, Corn and Black Bean Salad comes together for a delicious side dish with a refreshing, zesty dressing.

Ingredients

  • 3 avocados

  • 15 oz can black beans

  • 15 oz can corn

  • ½ red onion, chopped

  • FOR DRESSING
  • 3 Tbs olive oil

  • 1 lime, squeezed for juice

  • 3 garlic cloves, minced

  • ½ tsp garlic salt

  • ½ tsp black pepper

  • ½ tsp cayenne pepper

Directions

  • Peel and chop the avocados into small cubes. Place in a large salad bowl
  • Drain the black beans and canned corn. Add the black beans, corn and chopped onions to the bowl as well
  • Prepare the dressing by mixing all the ingredients in a separate, smaller bowl. Mix until well blended
  • Pour the dressing over the salad and mix with a spoon until everything is coated well
  • Serve immediately and refrigerate any leftovers
