
Chicken and avocado are two of the healthiest foods you can choose in your diet. But let’s be honest, they can be a little bland and get boring after a while. These are two foods that we almost always have in our household, so I pride myself in finding different ways of making them so as not to get jaded by another chicken dish. This Avocado Chicken Salad is kind of a combination of my Classic Chicken Salad and Simple Guacamole blending to make one delicious super salad.

BAKING PERFECTLY JUICY CHICKEN BREASTS
Since one of the main ingredients in this dish is chicken, it’s important to take a little time to make sure you bake it to perfection. I’ve had a lot of trial and error when it comes to baking chicken, but I’ve finally found a method that yields juicy, flavorful results. I’ve outlined my simple steps below:
- Brine the chicken for about 15 minutes. This pretty much means submerging the chicken breasts in water with about one tablespoon of salt.
- Next, remove from water, pat dry, and rub each chicken with your choice of oil (olive oil is my go-to).
- Sprinkle with salt and pepper then place on a baking sheet.
- Bake at 400 degrees for 35 minutes.
- Let rest 5-10 minutes before shredding.

AVOCADO CHICKEN SALAD
I chose to keep the seasoning simple with just lemon, salt and pepper to stick with the “light and refreshing” taste I was going for. But if you’re feeling adventurous, I encourage you to go crazy! Add a little jalapeno, red pepper, etc. Serving this on a whole wheat tortilla with some shredded cheese will make for a wonderfully healthy and filling meal. REFRESHING AVOCADO CHICKEN SALAD RECIPE

kcalThis Refreshing Avocado Chicken Salad combines classic chicken salad with healthy avocado instead of mayo. Filled with onions, carrots, corn and a zesty lemon flavor!
Ingredients
3 chicken breasts
1 tablespoon olive oil
2 avocados
½ a red onion, chopped
½ cup shredded carrots
15 oz can of corn, drained
1-2 Tbs lemon juice (depending on your preference)
2 tsp salt, divided
2 tsp pepper, divided
Directions
- Preheat oven to 400 degrees
- Rub each side of the chicken breasts with the olive oil and then sprinkle with salt and pepper
- Place side by side on a pan and bake for 35 minutes
- After chicken has finished baking, remove from oven and let rest about 15 minutes. You can then shred the chicken by hand or chop into small cube sized pieces
- Peel the two avocados and chop into small pieces
- Mix the chopped chicken and avocado in a large bowl
- Add the onions, shredded carrots, corn, lemon, 1 tsp salt and 1 tsp pepper. Mix until everything is well coated
- You can serve immediately or refrigerate until cool
