Black Halloween Pasta

Halloween recipes usually consist of sweets, baked goods, candy and chocolate! It’s easy to draw a Jack-o-lantern face on a cookie with some icing. Or stick some googly eyes on rice Krispy treats. But when it comes to savory foods, it’s a little trickier to make them “Halloween” themed. So, I came up with this spooky Black Halloween Pasta to add a little variety to your Halloween party this year!

INGREDIENTS NEEDED FOR PASTA

For the mix-ins, you only need 4 simple ingredients: Black pasta, orange bell peppers, black olives and red onions. Other than the pasta, all the other ingredients will be added in raw saving you time and giving you lots of extra crunch and flavor.

PUMPKIN SHAPED BELL PEPPERS

As you’ll notice, the bell peppers in this pasta are cut into pumpkin shapes adding to the Halloween theme. The little pumpkins floating around the black pasta gives this dish a dark, “haunted pumpkin patch” feeling in my opinion. It was hard to find a pumpkin shaped cookie cutter that was small enough, so I ended up just cutting the pumpkin shapes out with a regular knife. I am definitely not an artist by any means. But luckily, pumpkins are not too hard of a shape to free-hand so they turned out okay!

INGREDIENTS FOR THE DRESSING

The dressing for this pasta is the best part and gives this dish all it’s flavor. It’s filled with a whole jar of sun-dried tomatoes including its oils and herbs. You’ll then add a delicious combination of lemon juice, garlic, salt, black pepper and chicken bouillon.

There are all different kinds of black pastas you can find in stores or online. But I chose to go with a black bean pasta (affiliate link) because it was the most affordable and came in a variety of shapes. I bought my black pasta at my local Aldi but I have also seen them at Walmart, Trader Joe’s and Kroger stores. It’s important to note that not everyone will like the taste of black bean pasta. It can be a bit of an acquired taste. It literally tastes exactly like black beans and has a chewier texture than regular pasta. But the dressing adds a great offset with all its flavor.

The vivid orange bell peppers against the backdrop of black pasta gives this dish a ghostly Halloween feeling. Drenched in a scary-good sun-dried tomato dressing!

Ingredients

  • FOR PASTA
  • 12 oz black bean pasta

  • 1 orange bell pepper

  • 2 cans black olives, chopped (6 oz each)

  • ½ red onion, chopped

  • FOR DRESSING
  • 8.5 oz jar sun dried tomatoes in oil and herbs

  • 1 Tbs lemon juice

  • 3 cloves garlic, minced

  • ½ tsp garlic powder

  • ¼ tsp black pepper

  • ½ tsp garlic salt

  • ½ tsp chicken bouillon (leave out for vegan option)

Directions

  • Cook the pasta according to package instructions. Drain and set aside
  • Cut the orange bell peppers into pumpkin shapes using a knife or a small pumpkin shaped cookie cutter. Set aside with the chopped onions and olives for now
  • Prepare the dressing by adding all the contents of the sun-dried tomatoes jar into a small mixing bowl
  • Add the lemon juice, garlic, garlic powder, black pepper, garlic salt and chicken bouillon to the mixing bowl as well
  • Stir until everything is well combined
  • In a large bowl, add the pasta, bell peppers, onions and black olives. Mix well. You can save a few pumpkin shaped bell peppers on the side to top the pasta with later
  • Add the dressing and stir until everything is coated well
  • Serve hot or cold
