Broccoli Egg Salad

A few weeks ago, Aldi was selling their carton of eggs for $0.39!!! They were sold out for three days before I was finally able to get my hands on some. So naturally, once they were all stocked up again, I made sure to buy as many cartons as I could! Afterwards, I was left with the dilemma of what the heck to do with all those eggs. Other than the obvious Deviled Eggs, my next idea was this Broccoli Egg Salad.

I always thought plain old egg salad was kind of boring. I wanted something with a little more pizzazz (yes I know, I really love using that word). Adding a vegetable and a meat really did the trick! In my experience, broccoli always does really well in salads. And for the meat, of course I chose my trusted kielbasa.  Easy ingredients, quick prep time! A creamy combination of Broccoli Egg Salad mixed with turkey kielbasa for a delicious, refreshing side dish.

Ingredients

  • 2 heads broccoli, cut into florets

  • 5 hard boiled eggs, chopped

  • 13 oz turkey kielbasa, chopped into small pieces

  • 1 cup mayo

  • 1 Tbs spicy brown mustard

  • ¼ tsp garlic salt

  • 1/8 tsp black pepper

Directions

  • Place broccoli in a large pot with 1 inch of water. Steam the broccoli for about 5 minutes on medium heat. Remove from heat and drain
  • While broccoli is steaming, whisk together the mayo, mustard and spices until well blended
  • In a large bowl, add the steamed broccoli, chopped eggs, and chopped kielbasa
  • Top with the dressing and mix until everything is coated well
  • Place in the refrigerator for 2-4 hours until completely cool. Serve and enjoy!​
