Chicken & Sausage Jambalaya

This amazing Chicken & Sausage Jambalaya recipe was inspired by Sun Kissed Kitchen’s Cajun Jambalaya! But I changed the recipe a little to make it my own. So please check out both recipes to see which one suits your needs for dinner tonight. The difference in my recipe is that I left out the shrimp and I changed the spice mixture to include garlic salt, paprika, and onion powder.

Chicken & Sausage Jambalaya

This jambalaya recipe has a long list of simple yet essential ingredients! They mix together just perfectly to create an incredibly savory dish full of spices, vegetables and protein in every bite! I’ve organized the list of ingredients for you below based on their category in hopes it’ll make things a little easier for you to follow!

VEGETABLES

  • 1 onion
  • 3 garlic cloves
  • 2 celery sticks
  • 1 jalapeno
  • 14 oz can crushed tomatoes
  • 8 oz frozen okra
  • 2 bell peppers

PROTEIN

  • 2 chicken breasts
  • 13 oz smoked sausage

SPICES

  • 1 Tbs Cajun seasoning
  • 1 tsp crushed thyme
  • ½ tsp cayenne pepper
  • ½ Tbs paprika
  • 1 tsp onion powder
  • 1 tsp garlic salt

OTHER

  • 2 Tbs olive oil
  • 4 ½ cups chicken broth
  • 1 cup white rice

Although the list of ingredients is long, this recipe is actually very easy to put together. Most of it is cooked in one large pot, with the exception of browning the chicken and sausage in a separate skillet. I also love the flexibility of this recipe in regards to how thick or thin you want to make your jambalaya. For instance, even after all the ingredients are cooked through and mixed together, you can still pour in a little extra chicken broth at the end. The addition of the extra chicken broth won’t alter or water down the taste of the jambalaya at all. It will simply help you reach your desired jambalaya consistency since everyone has their own preference!

A loaded list of fresh ingredients come together to make this amazing Chicken & Sausage Jambalaya dish!

Ingredients

  • 2 Tbs olive oil, divided

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 2 celery sticks, chopped

  • 1 jalapeno, minced

  • 1 cup white rice (washed well)

  • 14 oz can crushed tomatoes

  • 4 ½ cups chicken broth, divided

  • 1 Tbs Cajun seasoning

  • 1 tsp crushed thyme

  • ½ tsp cayenne pepper

  • ½ Tbs paprika

  • 1 tsp onion powder

  • 1 tsp garlic salt

  • 2 chicken breasts, cut into chunks

  • 13 oz package smoked sausage, sliced

  • 8 oz frozen okra

  • 2 bell peppers, cut into thin slices

Directions

  • In a large pot, heat 1 Tbs olive oil on medium heat. Add the onions, garlic, jalapeno and celery. Cook on medium heat until fragrant (about 5-10 minutes)
  • Wash the rice under running water until the water runs clear. Then, add the washed rice to the pot as well
  • Add the crushed tomatoes, 3 cups chicken broth, and all the spices to the pot. Mix well and simmer on medium heat for about 30 minutes (or until rice is cooked through)
  • While pot is simmering, start preparing the chicken and sausage. In a separate skillet, add 1 Tbs olive oil on medium heat.
  • Add the chopped chicken to the skillet and heat until browned all around
  • Add the sliced sausage to the skillet and continue cooking until just brown all around
  • Add the cooked chicken, sausage, bell peppers and okra to the pot and reduce the heat to low. If the jambalaya is too thick, add the remaining 1 ½ cups chicken broth to the pot at this point
  • Simmer for another 10 minutes, mixing occasionally
  • Serve and enjoy!
