Chocolate Covered Peanut Butter Pretzel Treats

Three ingredients is all you need to make these Chocolate Covered Peanut Butter Pretzel Treats! Rich chocolate, crunchy peanut butter & salty pretzels! Now that I’ve got your attention….. 😉 This truffle like treat is great for the holiday season! I used a generic type semi-sweet chocolate that hardens quickly and stays firm even in room temperature. So, you can pack these up in little favor bags and give them away during the holidays without worrying about them melting. Or if you decide to keep them all to yourself, I promise you will be munching on these all day.

PREPARING THE PEANUT BUTTER PRETZEL MIXTURE

This dessert is so easy to make and requires zero baking. I’ll usually start by pulsing the pretzels in a food processor until they’re completely crumbled. It’s okay to have a few larger pretzel chunks here and there because it gives the finished product a nice crunch. Using crunchy peanut butter instead of creamy is also highly recommended! Mix the peanut butter and pretzel crumbs in a large bowl making sure to blend thoroughly and evenly. 3-STEP FREEZING METHOD

I would say the hardest part about this recipe is the waiting because there is a bit of freezing and refrigeration required. I use a 3-step freezing method that I’ll list out for you.  

  1. First, I freeze the peanut butter and pretzel mixture before even forming it into balls. I just put the who mixing bowl with the mixture into the freezer for 20 minutes. It gives the mixture a much firmer consistency that’s easier to mold.
  2. After freezing, you’ll form the peanut butter pretzel balls by rolling them in your hands or using an ice cream scoop. Place the formed balls onto a large baking pan covered in parchment paper. You’ll notice at this point that the balls are still not as firm and compact as desired. That’s where the second round of freezing comes in. Put the entire baking pan into the freezer and freeze for another 20 minutes.
  3. Next, take the balls out of the freezer. You’ll notice they are much firmer and easier to work with. You can now firmly roll the balls in your hands creating a compact and perfectly round ball. You can stick a toothpick in them at this point to make them easier to dip later. And finally, put them back into the freezer for the third and final freezing round. This time you’ll leave them in the freezer for about 30-45 minutes.

As you can see, the 3-step freezing technique should take no longer than an hour and a half total. The colder and harder the peanut butter pretzel balls are, the more likely that they won’t fall apart when covered with warm chocolate. You can melt the chocolate chips in the microwave until smooth. And then proceed with dipping the peanut butter pretzels balls. The toothpicks you inserted earlier will make a huge difference in the ease of dipping them. No messy fingers necessary!

Once the peanut butter pretzel balls are coated, the chocolate should harden fairly quickly when you place them in the fridge. Just try not to eat them all right then and there. Three ingredients is all you need to make this dessert happen. Peanut butter, pretzels, and chocolate chips. No baking necessary!

Ingredients

  • 16 oz container of crunchy peanut butter

  • 3 cups crushed pretzels

  • 12 oz bag of semi-sweet chocolate chips

Directions

  • Crush the pretzels by pulsing in a food processor. It’s okay to leave some large pretzel chunks here and there
  • Combine the crushed pretzels and peanut butter in a bowl. Mix well until evenly blended
  • Place the mixture in the freezer for about 20 minutes
  • Prepare a large baking pan by covering it with parchment paper
  • Remove the peanut butter pretzel mixture from freezer and roll into balls about 1 ½ inches thick. I was able to make about 37 balls. Place the balls side by side on the prepared baking pan
  • Place the baking pan with the balls in the freezer for another 20 minutes
  • Remove from freezer and firmly roll the balls in your hand until they are packed tightly and perfectly round. Add a toothpick to each ball if desired (this will make them easier for dipping later)
  • Return to freezer one last time for another 30-45 minutes
  • Once that time is up, start melting the chocolate chips in the microwave 30 seconds at a time. Stop when the chocolate is melted smooth without being too thick. I did two 30 second intervals and one 15 second interval, stirring the chocolate in between each interval. This will prevent the chocolate from burning
  • Remove the balls from the freezer and start dipping them into the chocolate. Make sure to get a nice thick coating on each ball by rolling it in the chocolate. Use a spoon if needed
  • Place the coated peanut butter pretzel balls back unto the baking pan. Once all the balls are coated, place them in the fridge for about 10 minutes until the chocolate hardens

Notes

  • Store in an air tight container. They can be left at room temperature if it’s not too hot out. Otherwise, store in the fridge for best results.
