How can something that looks and tastes so delectable, be sooooo easy to make?! The answer is chocolate and peanut butter. Those two ingredients always make an unbeatable combination. I have a few chocolate + peanut butter desserts on my blog to back up this statement and I can tell you they’re a delicious hit every time! These particular Chocolate Peanut Butter Rice Krispies Treats are a vintage recipe my husband and I discovered years ago when we were first started dating. It’s long past due that I finally add the recipe to my blog!

MELTING THE MARSHMALLOWS & PEANUT BUTTER

For anyone who has made rice krispies in the past, I’m sure you know what a simple treat they are to whip up in a hurry and the kids always enjoy them. I like to start by microwaving the marshmallows and peanut butter for about a minute and then stirring them until they’re blended and smooth. You can also heat the marshmallows and peanut butter in a pot on the stove if you prefer. But I find that the microwave method is a lot faster.

From there, I add the rice krispies cereal to the bowl and mix until I get a nice big evenly blended blob. I’ll be honest, I almost ALWAYS use my hands in this step. It’s so much easier to squeeze the cereal into the melted marshmallows instead of trying to fight the stickiness with another utensil. Getting to lick the sweet leftovers off your fingers afterwards is just an added bonus. Maybe I’m the only weirdo around here, but those are just my two cents. 😉

MELTING THE CHOCOLATE

Lastly, you’ll pour the contents into an 8 x 8 pan and press firmly with your hands until the mixture is spread evenly and packed tightly (see above picture for reference). Then comes the fun part….. the chocolate! I use semi-sweet chocolate chips in most of my chocolate covered desserts. I also like to melt my chocolate in the microwave in 30 second intervals, stirring in between until smooth. There’s a little trick I learned over time to prevent melted chocolate from clumping up. Simply add ½ a teaspoon of oil or butter to the mixture. This will usually fix any clumps in overheated chocolate and give it a nice glossy finish.

CHOCOLATE PEANUT BUTTER RICE KRISPIES

Once the chocolate’s melted, simply pour it over your rice krispies pan and spread it around evenly. Then pop the whole pan in the fridge for at least 10 minutes to help the chocolate harden quicker. And there you have it! Delectably delicious Chocolate Peanut Butter Rice Krispies Treats! Once they’re set, the rice krispies can be stored at room temperature until they’re devoured (which will probably be fairly quickly if your family is anything like mine when it comes to dessert). A delectably delicious treat full of peanut butter and covered in chocolate. A twist on the classic dessert that’s super easy and quick to make!

Ingredients

  • 3 cups marshmallows

  • 1 cup creamy peanut butter

  • 4 cups Rice Krispies cereal

  • 1 ½ cups semi-sweet chocolate chips

Directions

  • Place the marshmallows and peanut butter in a large microwave safe bowl
  • Microwave for 1 minute. Stir until blended and smooth
  • Add the rice krispies cereal to the bowl and continue stirring until everything is mixed evenly (it might be easiest to use your hands to knead all the ingredients together more thoroughly)
  • Grease an 8 x 8 inch pan and pour the rice krispies mixture into it. Spread evenly and press firmly with your hands
  • In a small bowl, add the chocolate chips and microwave in 30 second intervals until completely melted and smooth
  • Pour the melted chocolate on top of the rice krispies and spread evenly with a spoon
  • Place the pan in the fridge for about 10 minutes to harden the chocolate
  • Cut into squares and store at room temperature
