Mini S’mores Bites Recipe

Mini S'mores

These cute little treats were brought to life when I had a major s’mores craving without any of the traditional s’mores ingredients on hand. Instead of graham crackers, I used golden grahams cereal. Instead of a Hershey’s chocolate bar, I used chocolate chips. And instead of jumbo marshmallows, I used mini marshmallows cut in half. Mini s’mores are better than no s’mores!

Mini S'mores

As you can tell from the pictures, these mini s’mores are incredibly easy to put together and require only 4 minutes of total baking time. Once they’re set, place them in an airtight container or Ziploc bag to pull out whenever you need a quick snack to munch on. I like to use the excuse that they’re made from cereal, so I can eat them for breakfast if I really wanted to. 😛

These little wonders will disappear in an instant so be sure to make A LOT! They are also very kid friendly (to make and to eat!). My daughter loves helping me top each graham cracker with marshmallows and chocolate chips. She also likes munching on all the ingredients before we can even get the job done. But I can’t blame her because I do the same. ;P  So just take your time, have fun with it and get ready to make some mini s’mores magic!

Just 3 ingredients and only 4 minutes in the oven. It doesn’t get any easier to have your quick fix of s’mores. Because mini s’mores are better than no s’mores!

Ingredients

  • Golden Grahams Cereal

  • Chocolate Chips

  • Mini Marshmallows

Directions

  • Preheat oven to 250 degrees
  • Line a baking pan with parchment paper. Place as many golden grahams as you desire on the baking pan, make sure they are spaced apart by at least half an inch
  • Cut the mini marshmallows in half. Place one half-marshmallow on each golden graham
  • Place the baking tray in the oven and bake for only 3 minutes to soften the marshmallows
  • Remove from the oven and stick a chocolate chip on top of each softened marshmallow
  • Return to the oven for just about 1 minute to soften the chocolate chips (don’t leave them in too long as you don’t want the chocolate to melt completely).
  • Remove from oven and place another golden graham on top of each chocolate chip to complete the mini s’mores.  (Note: If you’d like to keep some of the s’mores “uncapped” for a different look, simply put some aside after you place the chocolate chips on top before putting the tray back in the oven)
  • Store in an airtight container or Ziploc bag at room temperature. Enjoy!
