Pasta salad is one of my favorite things to eat. If there’s any kind of pasta salad at a party, you better believe I’ll be making a bee-line straight to it. It’s such a simple dish when you think about it but it’s still packed with so much refreshing flavor. This Peas & Corn Pasta Salad was ironically put together on a lazy day using whatever pantry items I had on hand. But the whole family loved the taste so much that it’s become a regular dish in our household ever since!
This recipe yields a massive party-sized bowl of pasta salad that could feed up to 16 people! But if you’re cooking for a smaller crowd, you can easily cut the ingredients in half and follow the same directions accordingly.
Again, a majority of the ingredients in this pasta salad recipe consist of simple pantry items such as canned peas, canned corn and dry pasta. The dressing, however, is what really gives this pasta salad its incredibly savory, addicting flavor. It’s a mixture of mayo, Dijon mustard, salt and pepper. You’d be surprised how good those four ingredients taste when mixed together.

Peas & Corn Pasta Salad Recipe

Ingredients
32 oz elbow pasta
½ red onion, chopped
2 cans corn, drained (15 oz each)
2 cans peas, drained (15 oz each)
1 ½ cups mayo
1 Tbs Dijon mustard
½ tsp salt
½ tsp pepper
Directions
- Cook pasta according to package instructions. Once cooked, drain the pasta and add it to a large serving bowl
- In a separate bowl, prepare the dressing by mixing the mayo, mustard, salt and pepper until smooth
- Add HALF the dressing to the pasta and mix well
- Drain the water from the canned corn and peas. Add all the corn, peas and onions to the pasta. Mix well
- Pour the rest of the dressing onto the pasta salad and mix until everything is coated evenly
- Store in the fridge for 2-4 hours (or overnight) until completely cool
