Baked Parmesan Zucchini Fries

I came up with these Baked Parmesan Zucchini Fries when I desperately needed my kids to eat more vegetables. I knew they liked fries. And I knew they liked Parmesan. So naturally, parmesan zucchini fries seemed like the perfect solution. They’d be eating their vegetables without even knowing it! I felt like an evil genius. The only problem was, when these zucchini fries came out of the oven, they were so delicious, that my husband and I ate the whole pan before the kids could even try them. Oops. 😂

INGREDIENTS NEEDED

Since I originally planned on making this dish for kids, I wanted a very simple list of ingredients and steps. This needed to be a recipe I could whip up in a jiffy if need be. The zucchinis are cut into thin “fry-shaped” slices and then covered generously in olive oil. For the coating I used a simple mix of Parmesan, salt, pepper and a little flour to give it that final breaded texture.

COATING THE ZUCCHINI FRIES

I chose to dip each zucchini fry individually in the Parmesan mixture to ensure all sides were covered well. This takes a little longer but it’s totally worth it because it yields evenly crispy fries all around. If you’re in a hurry, you can add all the fries to the Parmesan mixture at the same time in a large bowl or Ziploc bag and then shake to coat. But I’ve tried this method and noticed that the Parmesan mixture just doesn’t stick as well to the fries and you end up with soggier, limp zucchini fries. So, I highly recommend taking the time to coat each fry one by one and laying them side by side on a baking pan.

BAKING THE ZUCCHINI FRIES

Which brings me to my next point: baking the zucchini fries instead of frying them. If you’re looking to save time, baking is definitely the method to choose. Not only is it healthier avoiding all that extra frying oil, but it’s also so much easier laying the fries on a baking pan and cooking them ALL at the same time. Within 20 minutes you’ll have crispy, Parmesan zucchini fries ready to be devoured.

I have to admit, these zucchini fries are definitely best eaten fresh, not leftover. But I don’t think that’ll be a problem because they’re so delicious I guarantee you won’t have any leftovers to worry about. BUT, on the off chance you do, I’d suggest reheating them in the oven, not the microwave to help bring back some of the crispness.

These Baked Parmesan Zucchini Fries are a healthy, savory snack the whole family will love! Simple ingredients and an easy baking method to ensure crispy zucchini fries!

Ingredients

  • 2 zucchinis

  • 3 Tbs olive oil

  • ¼ cup flour

  • 1 cup grated parmesan

  • 1 tsp salt

  • ½ tsp black pepper

  • Ranch (optional for serving)

Directions

  • Preheat oven to 425 degrees. Line a large baking pan with parchment paper
  • Cut zucchinis into small “fry-shaped” strips
  • Add the cut zucchini fries to a large mixing bowl and coat generously with the olive oil
  • In a separate bowl, mix the flour, parmesan, salt and pepper until well combined
  • Dip each fry in the parmesan mixture making sure all sides are coated well
  • Place the coated fries side by side on the prepared baking pan
  • Bake for 20 minutes
  • Serve with a side of ranch if desired. Enjoy!
