Ramen Noodle Salad

I am actually eating a bowl of this Ramen Noodle Salad as I’m writing this now.  This is one of the easiest and quickest salads I’ve ever had the pleasure of making. But you’d never know it from how much it bursts with savory flavor. I don’t know about you guys, but I’m one of those people who grew up eating a lot of ramen noodles. And no, it wasn’t because of the usual “broke college student” stereotype. I genuinely just loved the way they tasted! I mean you can’t beat all that seasoned salt. So, before everyone discovered how bad they were for you, I really had my fill. 

Ramen Noodle Salad

I don’t eat ramen noodles as often anymore, but when I do I make sure to make the most of it. I’ll try to mix them with something (usually protein) to make them more of a hearty meal. But this time around, I went the salad route because let’s face it, if it’s in the form of a salad, it’s gotta be healthy, right? That’s what I like to tell myself. Combining the seasoning packets with the oil and vinegar mixture made such an amazingly tasty dressing for this Ramen Noodle Salad. Read on for the full list of ingredients!

A twist on your favorite instant ramen noodles! The seasoning packets combine with oil and vinegar for an amazingly tasty dressing.

Ingredients

  • 1 coleslaw mix package (14 oz)

  • 2 packs instant ramen noodles (save the seasoning packets)

  • ½ a red onion, chopped

  • ½ cup olive oil

  • 2 Tbs vinegar

  • ½ tsp onion powder

  • ¼ tsp garlic salt (optional, the seasoning packets are usually salty enough)

  • ¼ tsp black pepper

  • ½ Tbs sugar

Directions

  • Add the coleslaw mix into a large mixing bowl 
  • Crush the uncooked noodles into smaller pieces to help break them apart 
  • Add the noodles to the mixing bowl with the coleslaw mix 
  • In a separate bowl, whisk together the olive oil, vinegar, all the spices, sugar and the two seasoning packets. Whisk until smooth 
  • Pour the dressing unto the salad and mix until everything is coated well 
  • You can serve immediately or chill in the fridge ​
