The almond bark melts the smoothest in my experience and still tastes pretty good so I like to stick with that for ease!

With your chocolate melted and ready, it’s time to coat the almond truffles. I like to use a toothpick to get this step done. Simply stick a tooth pick into an almond truffle, dip it into the melted chocolate, and place it back on the baking sheet. You can then use a second toothpick to smoothly pry the first toothpick out of the truffle ball.

Adding the Finishing Touch

Before the chocolate sets, sprinkle some of the extra crushed almonds on top of each truffle. This adds a lovely crunch and makes them look extra fancy. It also covers up any unsightly holes made from the use of the toothpick. You can then pop the almond truffles in the fridge until the chocolate has fully hardened, which shouldn’t take longer than 30 minutes.

Directions

  • Preheat oven to 325 degrees and line a baking sheet with parchment paper
  • Add almonds to the baking sheet in a single layer. Roast for 10-15 minutes
  • Add the roasted almonds to a food processor or blender. Blend until you reach a very fine, powdery consistency (about 2 minutes)
  • Add the vanilla, baking cocoa and maple syrup to the food processor. Blend until everything is well combined and smooth
  • Roll into 1-inch balls (I yielded about 78 balls). Place the balls evenly spaced on a baking sheet lined with parchment paper
  • Refrigerate for 1 hour
  • In a microwave safe bowl, add the chocolate almond bark. Microwave in 30 second intervals until completely melted and smooth
  • Dip each ball into the melted chocolate (you can use a toothpick to cleanly dip them) and place the chocolate covered balls back on the baking sheet
  • Top with crushed almonds while the chocolate is still wet
  • Place the truffles in the fridge for another 30 minutes to allow the chocolate to set
