They’re incredibly easy to make and absolutely delicious. Let’s dive into this scrumptious recipe!
Gather Ingredients
Before we get started, let’s gather our ingredients. Here’s what you’ll need:
- 2.5 cups almonds
- ½ cup baking cocoa
- 2 tsp vanilla extract
- 2/3 cup + 2 Tbs maple syrup
- 12 oz chocolate almond bark
- Extra crushed almonds (for topping)
You might already have some of these in your pantry, and if not, a quick trip to the grocery store will have you covered. Now, let’s get truffling!
Preparing the Almonds
First things first, we need to get those almonds ready. Take your almonds and give them a good roast. Just a little note, you might have almonds that are already labeled as “roasted.” However, I would still suggest following this step and “re-roasting” them because they blend up so much better in the food processor when they are warm and freshly roasted. Spread the almonds out on a baking sheet and pop them in the oven at 325°F for about 10-15 minutes, or until they’re nice and fragrant. Keep an eye on them and mix when needed so they don’t burn!
Making the No-Bake Almond Dough
Now it’s time to make what I like to call the “No-Bake Almond Dough”. It’s really the heart of the almond truffles but it will have a nice, thick consistency almost like a texturized, edible dough. You’ll start by tossing the almonds into a food processor and blend until you get a fine, sandy texture. Add in the ½ cup of baking cocoa, 2 tsp of vanilla extract, and 2/3 cup + 2 Tbs of maple syrup. Blend everything together until it forms a smooth, malleable dough. If it seems too dry, feel free to add a little more maple syrup until you get the desired consistency.
Shaping the Almond Truffles
Now comes the fun part – shaping the truffles! Take small amounts of the almond mixture and roll them into bite-sized balls. You can make them as big or as small as you like, but I find that about an inch in diameter is just right. I was able to yield about 78 truffles with those measurements. Place them on a baking sheet lined with parchment paper as you go.
Refrigerating the Truffles
Once you’ve shaped all your truffles, it’s a good idea to let them chill in the refrigerator for about an hour. This helps the truffles firm up, making them easier to handle when you’re coating them with chocolate. Simply place the baking sheet with the truffles into the fridge and take a well-deserved break. This extra step ensures that your truffles hold their shape perfectly and makes the chocolate coating process a breeze.
Melting the Chocolate Almond Bark
It’s time to get that chocolate almond bark ready. Break the 12 oz of chocolate almond bark into pieces and melt it in a microwave-safe bowl. Heat it in 30-second intervals, stirring in between until it’s completely melted and smooth. It’s important to note that you can use any other type of chocolate coating of your choice. Semi-sweet chocolate chips work great for this step as well and has a slightly better taste. If you do decide to use semi-sweet chocolate, you may just need to add a teaspoon of butter or oil because it tends to seize up when melted and can be a little too thick for coating at times. The almond bark melts the smoothest in my experience and still tastes pretty good so I like to stick with that for ease!
Coating the Almond Truffles
With your chocolate melted and ready, it’s time to coat the almond truffles. I like to use a toothpick to get this step done. Simply stick a tooth pick into an almond truffle, dip it into the melted chocolate, and place it back on the baking sheet. You can then use a second toothpick to smoothly pry the first toothpick out of the truffle ball.
Adding the Finishing Touch
Before the chocolate sets, sprinkle some of the extra crushed almonds on top of each truffle. This adds a lovely crunch and makes them look extra fancy. It also covers up any unsightly holes made from the use of the toothpick. You can then pop the almond truffles in the fridge until the chocolate has fully hardened, which shouldn’t take longer than 30 minutes.
