Cinnamon Swirl Cheesecake Bars

These Cinnamon Swirl Cheesecake Bars are the closest thing you’ll get to cheesecake without all the added sugar! The satisfyingly sweet flavor comes from the cinnamon graham cracker crust and 2/3 cup of honey in the filling. There were many variations of this bar online but I decided to leave out all the sugar and try something different. I was worried the bar wouldn’t have as “sturdy” of a hold but surprisingly, these bars held up great after baking and refrigerating.

As you’ll notice in the directions, I used a standard 8×8 square cake pan. I got about 16 decent sized bars out of this recipe! This dessert is the closest thing you’ll get to cheesecake without all the added sugar! Its satisfyingly sweet flavor comes from the cinnamon graham cracker crust and honey in the filling.

Ingredients

  • FOR CRUST
  • 18 full cinnamon graham crackers

  • 12 Tbs unsalted butter

  • FOR FILLING
  • 16 oz cream cheese

  • 8 Tbs unsalted butter

  • 1 egg

  • 2/3 cup honey

  • 2 tsp vanilla

  • 2 tsp ground cinnamon (plus extra for sprinkling on top)

Directions

  • Preheat oven to 350 degrees 
  • Line the bottom of an 8×8 square pan with parchment paper, then grease with oil
  • Grind the graham crackers into fine crumbs using a food processor 
  • Melt the 12 Tbs of butter and add to the food processor with the graham cracker crumbs. Continue pulsing in the food processor until well combined 
  • Add the graham cracker mixture to the pan and spread evenly along the bottom to make the crust. Press firmly with the back of a spoon or your fingers 
  • Next, soften the cream cheese and butter together in the microwave for about 1 minute 
  • Add the cream cheese, butter and egg to a large bowl and beat on low using a hand mixer 
  • Then add the honey, vanilla, and cinnamon and continue mixing on medium speed until smooth 
  • Pour the mixture over the graham cracker crust and spread evenly 
  • Sprinkle with more cinnamon as desired and use a toothpick to swirl the top for a decorative look 
  • Bake for about 25 minutes. Remove from oven, let cool at room temperature and then put it in the refrigerator for a minimum of 2 hours (or overnight) before serving  
  • Once cooled, cut into squares and use a spatula to remove from pan
