Look no further! These Pork Chops with Roasted Vegetables are the easy dinner you’ve been looking for. I put together a simple spice and herbs mixture for this recipe that turned out super tasty! I reserved this mixture for just the pork chops while the veggies got the usual Parmesan coating (similar to the one I use in my Breaded Parmesan Cauliflower recipe). It made for a great combination dinner all in one pan! For the vegetables, I chose cauliflower and green beans. But the possibilities are endless. Carrots and potatoes would be a fantastic choice as well.

The bake time for this recipe is only 25 minutes on 400 degrees. This is for 4 pork chops weighing about 6 ounces each. Cook time may vary if you’re making a larger serving of pork chops. Just make sure to always use a meat thermometer to guarantee the pork is cooked thoroughly. 145 degrees (with about a 5-minute rest) is safe to eat and will yield tender, juicy and flavorful meat. These Pork Chops with Roasted Vegetables yield tender, juicy pork chops surrounded by parmesan roasted cauliflower and green beans!

Ingredients

  • 4 boneless pork chops (about 6 oz each)

  • 3 Tbs olive oil, divided

  • 1-2 tsp garlic salt (depending on your preference)

  • 1 tsp black pepper

  • 1 tsp Italian seasoning

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 head cauliflower, cut into florets

  • 16 oz fresh green beans

  • ½ cup grated Parmesan, divided

  • (Extra salt and pepper for sprinkling on vegetables)

Directions

  • Preheat oven to 400 degrees 
  • Rub 1 Tbs of olive oil on all the pork chops evenly on all sides 
  • In a small bowl, mix all the spices together. Roll each pork chop into the spice mixture making sure to cover both sides (or you can sprinkle both sides using your fingers) 
  • Place the pork chops side by side in the center of a large sheet pan and set aside for now 
  • Prepare the vegetables. First, cut the cauliflower into small florets. Put the florets in a large bowl or Ziploc bag. Pour 1 Tbs olive oil over them and mix. Sprinkle with about ¼ cup Parmesan and salt and pepper to taste 
  • Shake the bowl or Ziploc bag until the cauliflower is coated well. Then pour it into the sheet pan surrounding the pork chops 
  • Prepare the green beans in the same manner: Place in bowl/Ziploc bag, mix in 1 Tbs olive oil, sprinkle with ¼ cup Parmesan, salt and pepper, and shake until well coated. Then pour in sheet pan surrounding the pork chops 
  • Place in oven and roast for about 25 minutes 
  • Remove from oven, let rest 5 minutes then enjoy!
