Since breakfast is my favorite meal of the day, getting creative with my breakfast food is something I love doing. You’d be surprised how many different things you can make with sausage, eggs and potatoes. One awesome thing about breakfast is that it’s great any time of day, not just morning! My Turkey & Cheese Omelet for example is a staple dinner in our household for those nights we’re too lazy to make a four-course meal. This Sausage & Potato Casserole is no different. It’s also filling, leaves lots of left overs and is full of spicy Italian flavor. 

What makes this casserole complete is that it’s paired with my grandmother-in-law’s Perfectly Flaky Crust Recipe. This crust is what gives the casserole a quiche-like style and taste. The heart of the casserole consists of spicy Italian sausage and diced potatoes. Usually, you’ll be able to bake this casserole for about 55 minutes at 350 degrees. However, if your oven is anything like mine, you might need a little extra bake time. Just make sure to check on the casserole after the 55 minutes to decide if it needs to be left in a little longer. For me, I stuck a butter knife in the center of the casserole to check if there was any excess liquid. If there is, leave the casserole in the oven for another 15-20 minutes.

This casserole is filled with spicy Italian sausage, diced potatoes and eggs. Topped with a layer of shredded cheese​ for a full breakfast in one dish.

Ingredients

  • ½ pound spicy Italian sausage

  • 2 cups diced potatoes

  • ½ cup chopped chives

  • 4 eggs

  • 4 Tbs flour

  • 1 1/3 cups milk

  • ¼ tsp salt

  • ½ tsp pepper

  • ½ cup shredded cheese

  • *Find ingredients for crust here (if you prefer no crust, you can make the casserole accordingly, skipping Step 8)

Directions

  • Preheat oven to 350 degrees
  • Cook the sausage on medium heat in a skillet on the stovetop until it’s cooked through and browned
  • Make sure to break the sausage up into small pieces as it cooks
  • Drain excess grease and set aside for now
  • While the sausage is cooking, boil the diced potatoes in a pot for about 10 minutes.
  • Mix the cooked sausage, boiled potatoes and chopped chives in a bowl and set aside for now
  • In a separate bowl, whisk together the eggs, flour, milk, salt and pepper. Mix until well blended
  • Cover the bottom of a 9 x 13 inch casserole dish with this Flaky Crust Recipe. Make sure the crust is spread evenly and goes up over the sides of the pan. Make sure there are no holes in the crust. (If you prefer not to make the crust, you can skip this step)
  • Pour the sausage and potato mixture unto the crust spreading evenly
  • Pour the liquid egg mixture you prepared earlier over the sausage and potato in the casserole dish. Make sure to pour it evenly throughout. You can shake the casserole dish slightly afterwards to make sure the liquid falls into all the crevices and evens itself out. Do not mix as you might risk poking a hole through the crust
  • Sprinkle a layer of shredded cheese over the top making sure to cover completely
  • Bake for 55 minutes on the middle rack
  • Check consistency with a butter knife. If it seems like there’s still some excess liquid, bake for an additional 15-20 minutes, checking regularly
  • If butter knife comes out clean with minimal liquid, then the casserole is done and ready to eat
  • Remove from oven and serve!
