Show of hands if you’re a lemonhead! I must admit I was never really a fan of lemon flavored desserts at first, but these Lemon Square Bars have most definitely changed my mind. This is another amazing recipe that belongs to my mother-in-law, Crissy. And it will be added to all the other Recipes From Mom I’ve collected. 🙂
This recipe has two parts to it: the crust and the filling. The ingredients for both parts are very minimal and super simple. I used a regular sized cookie sheet that was about 15.5” x 10.5” and only about ¾ of an inch deep. The tricky part about the filling is that it will fill your baking pan to the brim and sometimes bubble over. So, make sure to put a larger pan under it to prevent making a mess in your oven. Or, if you really prefer, you can always use a deeper pan. Just adjust the cooking time accordingly as it might take longer to bake if you use a deeper pan that makes thicker lemon square bars.
Make sure to top them off with some powdered sugar while they’re still warm (and maybe a few lemon slices!) These lemon square bars are dangerously addicting so make them at your own risk because you won’t be able to stop eating them. Read on for the full recipe!

Lemon Square Bars Recipe

Ingredients
- FOR CRUST
2 cups flour
½ cup sugar
1 cup butter
- FOR FILLING
4 eggs
6 Tbs lemon juice
2 cups sugar
4 Tbs flour
¼ tsp vanilla
Powdered sugar, for topping
Directions
- TO MAKE CRUST
- Preheat oven to 350 degrees
- Place the flour, sugar and butter in a large bowl. Stir until well combined
- Put crust batter on a regular sized baking pan (About 10” x 15”) and spread evenly with your hands and fingers
- Use a little bit of flour on your hands and fingers to prevent crust from sticking to you and make it easier to spread. Make sure the crust is evenly distributed and goes up the sides of the pan
- Place in the oven and bake for about 20 minutes until it’s light brown (or “tan” as my mom-in-law calls it). Set aside until filling is ready
- TO MAKE FILLING
- Place the eggs, lemon juice, sugar, flour and vanilla in a large bowl. Mix on medium until well combined
- Next, pour the mixture over the baked crust. It should spread evenly over the crust and will fill the pan to the brim. (Note: while baking, the filling might bubble over a little bit so make sure to place a larger pan underneath to prevent a mess in your oven)
- Place in the oven and bake for 20 minutes
- Remove from oven and cover the top generously with powdered sugar while still hot
- Cut with a serrated knife while still warm into square shapes
- Add more powdered sugar as desired
